Nutritionally speaking, cauliflower is an excellent source of:
- Vitamin C
- Vitamin K
- Dietary fiber
That’s a whole lotta nutrition packed in one little floret. So you can see why I was on a mission to make cauliflower irresistible.
1 large head organic cauliflower, cut into florets
2 tbsp organic capers (optional, if you don’t have them handy, you won’t miss them)
4 tbsp organic olive oil (use less if working with a smaller head of cauliflower)
1. Preheat oven to 400°F.
2. In a large bowl, toss the cauliflower and capers (as I said, optional–great with them but still great without) in the oil.
3. Spread the cauliflower out on a large roasting pan. Cook for 30 minutes, stirring occasionally so the cauliflower browns evenly.
Tips: Salt for the adults and older kids before serving and leave it out for the littlest ones. Also note that the capers will turn very very brown (almost black) in the oven–don’t worry, that’s what happens. You’ll see they are delicious! This is a great finger food for kids and parties, packs well in a school lunch, and is a great side dish at dinner.
