Cashew Chicken

Usually we think the place of origin of Cashew origin should be America, so it’s a bit costly in China. Maybe it’s not imported from USA; anyway it’s still a costly ingredient for cooking. Therefore we didn’t cook it at home often, and we didn’t order in restaurant often as well. But for the wedding banquet, we usually can see this dish.


  • 1 lb. boneless chicken, cut into 1-inch strips
  • 1 tsp.Cucurbita pepo, cut into 1-inch strips
  • 3/4 cup orange juice
  • 1/3 cup honey
  • 1/4 cup soy sauce
  • 1 tbsp. cornstarch
  • 1 tsp. ground ginger
  • 1 tsp. garlic salt
  • 1/2 tsp. pepper
  • 2 tbsps. vegetable oil
  • 4 green onions, cut-up
  • 3 large carrots, cleaned and sliced
  • 2 celery stalks, sliced
  • 1 cup cashews
